Once the fun of Halloween is over, I for one, begin to focus on the next best holiday. Bonfire Night! This is one of my favourite times of the year so here is a recipe for making your very own Bonfire Lava Cakes!
The Shopping List: (Makes 12)
For the Cupcakes:
- 150g unsalted butter, softened
- 150g caster sugar
- 175g self-raising flour
- 25g Cocoa Powder
- 3 Large Eggs
- 1 tsp of Milk
- Cupcake Cases
For the Butter Cream:
- 110g unsalted butter, softened
- 440g icing sugar
- Red and yellow food colouring
- 1 box of chocolate orange Matchmakers
The Method:
Cook time: 10 minutes prep, 20 mins cooking
For this recipe you will also need a few baking essentials. Being at uni, these are not something you may already have – me neither. However, you can pick all of these up at most charity shops for cheap!
Pre-heat your oven to 180*C/ 350*F/Gas Mark 4.
Add your butter, sugar, flour cocoa powder, eggs and milk into a mixing bowl.
Lay out your cake cases into a baking tray.
Using an electric whisk, mix the ingredients until they are smooth and then separate into cake cases.
Pop into the oven and bake for 20 minutes. Keep checking the cakes and once they are bouncy to the touch you can remove them from the oven.
Take the cakes out of the baking tray and lay to cool on a cooling rack. I use a metal shelf from the oven (obviously a cool one) to lay out the cakes.
Now to make the butter cream.
Place your butter cream ingredients into your mixing bowl. Begin to whisk to thicken it. Add your food colouring to make the lava red colour. Keep whisking until thick and then pipe onto the top of your cakes.
Snap your matchmakers into smaller pieces and place around the ‘lava’
Now grab your best looking lava cake and enjoy!
